I know when I painted the rear fender on my '05 Chopper, the fender had to be removed first. This meant disassembling the wiring for the taillights/brake light by the battery. I marked what each wire was for (right turn signal/right brake/etc.). You could either cut the wires and resplice when you assemble, or get an electrical pin extractor and remove the invidual pins/wires from the connector.
Once the fender was off (by removing the bolts on the strut at the frame), the struts were removed by unbolting from the fender, from inside the fender, and removing the turn signals/stems.
