well for the heck of it you can test for intake leak. If it's running very lean from taking in air past the intake seals, it could cause it to act up while going down the highway at a constant RPM. Have you looked at or done anything else besides plugs?Yes it is the motor

How long has this been on the bike though? It should have been a problem from day one. Not saying your wrong Splitlog.A read several post that does not allow enough flow around the 70'mph mark causing it to cut out. Tha fix was facing it up try that or put your old breather on for a test ride it would at least rule that out.
Yes, it could be the Air/fuel screw. They do tend to wear out after time and should be replaced if any slight grove is on the needle. Also can check to make sure the accelerator pump is working, not plugged and has a nice fan type spray into the carb, not a drip or stream.I had a similar situation where the bike would essentially "sneeze" through the carb at those same parameters. I was originally thinking I might need an intermediate jet change but a carb adjustment did the trick for me. Just a thought ? Keep us posted.
